An organically farmed Chianti Classico from the hills around Castellina, built mostly on sangiovese with a small addition of cabernet. Violets and ripe cherry open the nose, joined by warm notes of vanilla and liquorice, while the palate turns brighter and more savoury, with cherry and blood orange fruit carried by lively, food-friendly tannin. It finishes vibrant and refreshingly dry rather than heavy. The classic pairing is a plate of pappardelle with wild boar ragù, though it sits just as well alongside a good steak.
