A gin with a literal sense of place: most of its botanicals are grown and hand-picked from the Southern Highlands Botanic Gardens in Bowral, with lavender sourced from a nearby Crookwell farm. The nose opens with rose and lavender over herbaceous rosemary and thyme and a lift of orange peel. On the palate, savoury garden herbs and fresh mint mingle with cress and pink peppercorn for a distinctly floral, botanical character. Best served long with quality tonic and a sprig of thyme, or in a gin sour where its floral, herbal profile has room to shine.
