Part of Lark's new Signature Collection, Fire Trail No.151 is matured in rare Port and Sherry casks before a finishing stint in ex-bourbon and American oak wine casks. The nose brings baked pears in golden caramel, vibrant citrus and a whisper of cedar. On the palate, chocolate ganache and stewed mulberries sit alongside vanilla custard and succulent apricot compote. It finishes on dark cocoa-kissed hazelnuts, velvety coconut cream and sultanas laced with bush honey. Best enjoyed neat or with a drop of water to open the fruit further. A bold, flavour-forward expression of Lark's unmistakably Tasmanian house style.
