Inky and dense in the glass, this old-vine Barossa shiraz is heady with dark plum, liquorice and blackberry, layered with dark chocolate, fennel and vanillin cedar. The palate is lush and powerful yet poised, velvety tannins framing a long, opulent finish. It's built to cellar, though it drinks beautifully now. Match it with slow-braised beef cheek or a hard, aged cheddar.
