An unaged (joven) mezcal built from wild Cenizo maguey, a Durangensis species left to mature in the wild for twelve to fifteen years before being hand-milled rather than tahona-crushed. Durango's extreme climate and mineral-rich soil come through on the nose as smoke and stone, with fruit and a touch of chocolate emerging on the palate alongside the expected mezcal minerality. It is a spirit for slow, contemplative sipping neat, best allowed to open up in the glass. As with all Clase Azul releases, the mezcal arrives in a hand-crafted ceramic decanter, making it as much a collector's piece as a drinking spirit.
