Rosebery-distilled and built from eight individually distilled botanicals, including native sunrise lime, Geraldton waxflower, Dorrigo pepperleaf and strawberry gum. The nose opens with lifted juniper, lime blossom and fresh pine, with quieter notes of green tea and black pepper beneath. On the palate the flavour moves from stonefruit through citrus to fresh garden herbs and a whisper of eucalyptus, finishing long, with sweet lemon wrestling dry juniper and pine. A cold-vacuum-distilled gin equally suited to a classic martini or a considered G&T. One of the defining gins of the modern Australian craft distilling movement.
